Kimchi Pancake is one of my favourite dishes made with kimchi. I like having it with rice and a simple dip- mixture of soy sauce, vinegar, sesame oil dip.
The 5 ingredients: egg, flour, chopped kimchi, water, kimchi juice and salt. Other optional ingredients are chopped onion, chopped spring onion and gochujang. The ingredients are really basic, but getting the texture and consistency right is not that easy. Even though I have made kimchi pancake for more than 5 years, I do get it wrong after I have not made it for a long time.

The tip is more flour, less liquid. You can omit egg but it helps to bind it better.. If I get it wrong after cooking the first batch, I would end up adding more flour. The second batch onwards will turn out fine.
