My Glasgow Kitchen

My Little Corner of the World

Gosari (fernbrake/ bracken fern) is a type of wild fern vegetable found in mountains. It is actually a controversial dish as it is carcinogenic.

The carcinogenic properties can be removed from soaking in water and boiling it. So the initial process can be slightly tedious. But I like it so much so it’s worth it.

My take on it is… If you like it, eat it in moderation. If you don’t like it, don’t eat it.

Gosari Namul (Korean Fernbrake Side Dish) Recipe

Ingredients

Dried Fernbrake

Garlic

Sesame seed

Spring onion

Soy sauce

Sesame oil

Method

Prepare Fernbrake

1.Soak dried fernbrake overnight. One serving is about 50g-100g dried fernbrake. I half a packet so I could have it for a few days.

2. Rinse it and boil it for 10 minutes

3. After that, rinse it with tap water and boil it again

4. Soak for another 1 hour or until soft.

Most people just do one round of boiling but I prefer to do it twice.

Cook Fernbrake

I usually just season it like other namul with garlic, sesame oil, spring onion, soy sauce and sesame oil and stir fry it. Add salt to taste or water to soften it. Sprinkle it with sesame seed
