Eight treasure congee 八宝粥 also known as laba congee consist of glutinous rice, nuts, seeds and dried fruits.


You can mix and match however you like. However, glutinous rice is a must as it gives it a thick starchy texture.

  • Grains: black glutinous rice, white glutinous rice, barley, job’s tear
  • Nuts: Peanut, Walnut, Cashew nut, Gingko
  • Beans: Azuki bean, mung bean, black bean, kidney bean
  • Seeds: Lotus seed, Sunflower seed, pumpkin seed
  • Dried fruits: Dried apricots, red dates, goji berry, raisins, longan, dried wintermelon
  • Others: Dried lily slices, Chinese Yam

It is relatively healthier rice congee as the addition of nuts, beans and seed makes it nutritious.


Eight treasure Congee/ Laba Congee Recipe

Ingredients

2 serving

2 tbs black glutinous rice

2 tbs white glutinous rice

2 tbs barley

1 tbs azuki bean

1 tbs mung bean

1 tbs black bean

1 tbs walnut

1 tbs raisins

3-4 cups of water

Sugar (optional)


Method

1. Soak glutinous rice and beans for 12 hours.

2. Boil ingredients above for 1 & half hours.

3. Serve hot or cold.
