I found out that there is another way to do it. Video here.
This way saves cost by omitting tomato ketchup and saves time by not needing to wash the frying pan after cooking the tomato + tomato sauce.
Tips and trick:
- White pepper in raw chopped tomato
- 2 tablespoons + spring onion oil in egg mixture
- Sesame oil to fry
I adapted it slightly.
Ingredients
- 3 Unripe tomatoes
- 4 large eggs
- 1 tbs sesame oil
- 5 tbs vege oil
- 3 tbs chopped spring onion
- salt to taste
- pepper to taste

Method
1. Cut unripe (crunchy) tomato up into 16 pieces each. Put aside
2. Break an egg and add 1/3 portion of spring onion. Mix well. Put aside
3. Heat vege oil on high heat.
4. Pour egg mixture until well ‘scrambled’
5. Add tomato and sesame oil. Stir it well.
6. Add 1/3 spring onion, salt and pepper to taste.
7. Serve on dish and 1/3 spring onion used for garnish.
I like the crunchy tomatoes and dry egg. The other style result in a nice tomato flavoured sauce but soggy eggs. Will stick to this in the future.
