I like including beans in my diet as it is part of 5 a day. Black beans are high in antioxidants and is a good source of protein.

Some people soak the black beans soak the black beans ahead of time to soften it. But I find that this soaking process is not required as it softens easily compared to other beans and peanut. A 3-6 hour cooking process is sufficient can soften it.

This soup is my ‘back up’ soup that I cook the end of the week as it is stored in my dried good pantry.


Chinese Black Bean Soup Recipe


Ingredients

200g black bean

7 red dates

2L water

400g pork bones

50g soy bean (optional)

10 pieces solomon’s seal/ yuzhu (optional)


Method

Parboil pork bones for a few minutes. Put all the ingredients into the pot. Boil then simmer for at least 3 hours. Add salt to taste.
