This Malay/ Nyonya dessert consist of a few ingredients: coconut milk, tapioca, sugar and egg and is quite straightforward to make.

Tapioca

However I have been holding off trying it out as it is really high in carbohydrates.

I tried it with 2 texture: grated and finely processed. Both tasted pretty good.

Baked Tapioca Cake Recipe (Kuih Bingka Ubi)


Ingredients

200ml coconut milk

500g grated tapioca

80g sugar

2 eggs

3 Pandan Leaves (Optional)


Method

1.Grate tapioca.

2. Rub in pandan leaves and remove before baking.

3. Mix in coconut milk, sugar and eggs.

4. Pour it into a loaf pan (8inch X 4inch)

5. Bake 180C for 60 minutes or until browned.

6. Leave it at room temperature to cool.
