Piglet and I opened a big jackfruit about 5 days ago and had extra to spare to bake or cook.
I came across this recipe and decided to try it as there is no added sugar in it. It tasted fine without sugar as the jackfruit was quite sweet.
The texture was very kuih like so I called it kuih nangka. Maybe this could be converted to the base of a kuih talam too.
Steamed Jackfruit Rice Cake (Kuih Nangka) Recipe

Ingredients
250g jackfruit (seed removed)
125g rice flour
200ml coconut milk
50ml water
Method

1. Blend jackfruit, water and coconut milk.

2. Mix in rice flour

3. Oil 7’’X 5’’ container and pour mixture.

4. Steam it for 30 minutes.

5. Leave it to cool at room temperature for 1-2 hours.
6. Serve at room temperature or chilled. Store in the fridge for a few days.
