I used to cook this soup when I was studying in university as the ingredients were readily available at the local mini supermarket. I used to buy pre-cut corn and chicken legs for this soup. It was also quite popular among my housemates. I suppose it is quite similar to their cream of corn soup.

The soup is tastier and sweeter if the corn is simmered in the soup for long duration so I try to prep the soup longer than 3 hours. This time around I simmered it for 6 hours. I added the carrots at the later stage as I did not want it to be too mushy.

I cut a corn into 5-6 chunks so it is easier to consume.


Chinese Corn Soup Recipe

Ingredients

2 corn

1 carrot

7 red dates

2L water

400g pork bones


Method

Parboil pork bones for a few minutes. Put all the ingredients into the pot. Boil then simmer for at least 3 hours. Add salt to taste.
