Piglet was surprised when I asked him to buy a packet of mung bean to make taugeh last week.

We do a weekly grocery shop and the hypermarket we go to sells 1kg of taugeh (by bulk). Usually it takes us 4 days to consume it and there is still some remaining for the compost.

During this lockdown period, we have been storing more food in the fridge since we only do a weekly shop and we don’t do any takeaways. Buying and storing that much taugeh just did not make sense.

The last time I grew taugeh was when I was 7 years old. When I was at the kedai runcit (provision store), I used grab a small handful of mung beans sprouts (after asking the shop keeper) and stuff it in my pocket. It was like a mini project.


Grow Your Own Taugeh (Mung Beans Sprout)

Things required:

Colander/ Steam Basket

Kitchen Paper Towel

Mung Bean

Black plastic bag/ Dark cloth

Plastic basin

Water


Day 1

Soak mung beans for 8 hours and spread it on a colander/ steam basket with a kitchen towel layer

Day 2- Day 5

Water it twice a day and wrap it in a plastic bag/ cloth. I left it in a plastic basin so that for the water to collect (and then thrown away)

It was ready to be cooked on day 4 but I had already planned my dinner menu and cooked it on day 5


Prepping

I rinsed it a couple of times to remove the dark green mung bean skin and then removed the roots manually (optional).

How much to grow?

I overestimated and used 1 cup (about 200g) of mung beans. Each steamer basket contains 1/2 cup (about 100g) of soaked mung beans.

I cooked it for 2 dinner meals. Piglet and I had one plate of taugeh each. A bit too much.

Next time I will just use 25g (1/8 cup) mung beans per serving.
