Different vegetable has different cooking time. The fastest is courgette. I also had pumpkin and sweet potato in my pantry but it takes too long to roast so I omitted it. It is my first time roasting a good variety so I did it separately. It is more time consuming but it ensures nicely browned crunchy vegetable.

I drizzled it with oil, salt, paprika and cayenne pepper.

I separated it into four baking dish and loaded 2 at a time into the oven at setting fan with grill 180C.

Look how much the broccoli has shrunk after roasting. After that I mixed it all into 1 serving tray.
