Gluten from flour in non-keto baking forms a gluten matrix to hold the ingredients together. In this keto bread, eggs and xanthan gum are used for that structure.

Step 1: Mix egg
Step 2: Mix coconut flour, butter, baking powder, xanthan gum, salt
Step 2b: Mixed batter
Step 3: Pour batter into loaf tin (8 inchX4 inch) lined with parchment paper
Step 4: Bake at 180C for 50 mins
