ABC soup has been one of my favourite soups lately as I have been counting my 5 a day. I usually try to add at least 4 type of vegetables in it.

I have been omitting potatoes in it since potatoes absorb flavour and it is not part of the 5 a day as it is high carb.

Why is it called ABC? I have no idea. I thought that maybe it’s a basic soup so its easy to make? Or theres vitamin ABC in there?


ABC soup recipe

Ingredients

2 carrot

2 radish

1 Onion

2 tomatoes

5 red dates

2 pork bones

salt to taste

Others: 1-2 corn, 1 potato, 1 potato

Method

Chinese slow boil soup takes a long time but is really straightforward. Boil all ingredients then simmer for 1-6 hours depending on your preference. Add salt before serving. I usually add the tomato and onions later as I don’t want it to be too soft and soggy.

ABC soup (corn, radish, carrot)

ABC soup (carrot, red capsicum, green capsicum, corn, onion)
